NO BUTTER BUTTER CHICKEN

INGREDIENTS

500g organic chicken strips

1 tbs onion powder

1 tsp garlic powder

2.5cm ginger - grated or 1 tbs powder

2 tsp curry powder

1 tsp each cumin and coriander

1 can organic tomatoes

1/4 cup natural coconut yogurt

2 tbs almond butter

1 tsp himalayan salt

2 tbs honey

METHOD

Add spices, ginger, tomatoes, coconut yogurt, almond butter, salt, honey and 1 cup of water into a high powered blender.

Blitz until smooth and combined.

Heat a large pan over a medium high heat and add 1 tablespoon coconut oil or ghee.

Brown chicken strips in the ban and then add the curry mixture from the blender.

Bring to a simmer and reduce to medium low heat.

Cover the pan and cook for 10-12 minutes or until chicken is cooked through.

While curry is cooking, prepare some cauliflower rice and vegetables to serve.
